Roman Suplì

Roman supplì are one of the most iconic Italian street foods: crispy on the outside and soft on the inside, with a delicious melted mozzarella center. Simple ingredients, rich flavor, and that irresistible ‘cheese pull’ make them perfect for sharing or enjoying as a quick snack.

- 300 g rice
- 700 ml vegetable broth
- 200 g tomato passata
- 1/2 onion
- 50 g grated Parmesan cheese
- 1 mozzarella (cut into cubes)
- 1 egg
- Breadcrumbs as needed
- Oil for frying
- Salt and pepper
- Extra virgin olive oil
Preparation

Heat a drizzle of olive oil in a pan and sauté the onion

Pour in the tomato passata, season with salt , and cook for 10–15 minutes.

Add the rice directly into the sauce and cook it like a risotto, adding broth gradually. Cook until the rice is fully absorbed and creamy.

Turn off the heat, add Parmesan, and let it cool completely.

Take some rice, place a cube of mozzarella in the center, and shape into an oval and dip in beaten egg.

then coat with breadcrumbs.

Fry in hot oil (170–180°C ) until golden brown.
